ZUCCHINI BREAD 
3 eggs
1 3/4 c. sugar
1 c. salad oil
2 c. grated, unpeeled, raw zucchini
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 c. flour, unsifted
1 c. walnuts, chopped (optional)

Beat eggs until foamy. Beat in sugar and oil. Add zucchini and cinnamon, salt, baking soda and baking powder and mix well. Add flour and nuts. Bake at 350 degrees in one tube pan or two loaf pans until it tests done; approximately 1 hour for tube pan.
