BUTTERSCOTCH MERINGUE PIE 
1 c. brown sugar, firmly packed
6 tbsp. flour
1/4 tsp. salt
2 1/2 c. milk or evaporated milk & water
2 egg yolks, slightly beaten
3 tbsp. butter
1 tsp. vanilla
2 egg whites
4 tbsp. sugar
1 (9 inch) baked pie shell

Combine brown sugar, flour and salt in top of double boiler. Add milk and egg yolks, mixing thoroughly. Place over rapidly boiling water and cook only 10 minutes, stirring constantly. Remove, add butter and vanilla. Cool. Turn into pie shell. Beat egg whites, add sugar, beat until mixture will stand in peaks. Pile lightly on filling. Bake in moderate oven at 350 degrees 15 minutes.
