CANADIAN COCONUT SNOWBALLS 
1/2 c. butter
6 oz. pitted whole dates, finely snipped (1 c.)
1/2 c. sugar
1 egg
3 c. crisp rice cereal
1 c. flaked coconut

In a medium saucepan, heat butter over medium-low heat until melted. Add snipped dates and sugar. Add egg; beat well. Cook and stir over medium-low heat for 4 to 5 minutes or until mixture thickens and begins to bubble.
