BEST PEANUT BUTTER COOKIES 
1 1/2 c. sifted flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1 c. peanut butter (creamy or crunchy)
1/2 c. butter, at room temp.
1/2 c. sugar
1/2 c. firmly packed brown sugar
1/2 tsp. vanilla
1 egg

Preheat oven to 350 degrees. Lightly grease cookie sheets. Mix flour, baking soda and baking powder on piece of wax paper. Beat together butter, peanut butter, sugars and vanilla in large bowl until fluffy. Beat in egg. Add flour mixture.

Roll pieces of dough between hands to make balls the size of walnuts. Place 2 inches apart on cookie sheet. Flatten with fork to make criss-cross pattern. Bake 10-12 minutes or until lightly brown. Let stand 5 minutes. Remove to rack to cool.
