BREAKFAST APPLE BARS 
Nonstick spray coating
1/2 c. whole wheat flour
1/2 c. quick cooking rolled oats
1/2 tsp. baking soda
1/4 tsp. ground cinnamon
1/4 c. cooking oil
1/4 c. applesauce
3 tbsp. honey
1/2 tsp. vanilla
1/2 of a (6 oz.) pkg. (3/4 c.) mixed dried fruit bits
1/4 c. chopped walnuts

Spray a 10x6x2 inch baking dish with nonstick coating. In a medium mixing bowl stir together flour, oats, baking soda and cinnamon, set aside.

In a small mixing bowl stir together oil, applesauce, honey, and vanilla. Stir applesauce mixture into flour mixture till combined. Stir in fruit bits and nuts. Spread mixture evenly in the prepared baking dish. Bake in a 350 oven for 15 to 20 minutes or till a wooden toothpick inserted near center comes out clean. Cool in the dish on a wire rack. Cut into 16 bars.

Store in a tightly covered container at room temperature or in the freezer. Makes 8 servings.
