PORK CHOPS WITH VIDALIA ONIONS 
8 thick pork chops
1 tsp. thyme
1/4 tsp. pepper
Salt to taste
8 slices Vidalia onion
8 lemon slices
8 tbsp. brown sugar
8 tbsp. catsup

Arrange pork chops in baking pan; sprinkle with salt, pepper and thyme. Top each chop with a slice of onion, lemon and a tablespoon of brown sugar, then catsup. Cover pan with a tight lid and bake at 350 degrees for 1 hour. Uncover and bake an additional 30 minutes. Baste chops with drippings. Serves 8.

Prepare the night before, cover with foil or a tight lid and put in refrigerator to bake as soon as you get home from work, or go ahead and bake the night before in a glass casserole and heat in the microwave at 50% power before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
