PORK CHOP ONION - RICE BAKE 
6 pork chops
2 tbsp. lard
1 c. rice, uncooked
Hot water
1 envelope onion soup mix
1 (4 oz.) can sliced mushrooms
2 tbsp. pimento, diced

Brown pork chops, spread rice in bottom of rectangular baking dish. Reserve 1 tablespoon of seasoning and bits of onion to put over rice. Drain mushrooms, reserving liquid and distribute mushrooms and pimento over rice. Add hot water to reserved mushrooms liquid to equal 3 cups liquid and pour over rice mixture. Arrange pork chops over rice. Sprinkle with the remaining seasoning. Cover tightly with foil and bake in moderate oven (350 degrees) until tender, (45 minutes to 1 hour). Remove foil and cook until dry. Makes 6 servings.

My hubby just fixed these for supper and they are getting rave reviews. We did not have the mushrooms or pimentos but other than adding a little creole seasoning to the chops was done the same. Chops are tender and the rice is perfect.

Followed directions but had 7 boneless pork chops so added a half cup uncooked quinoa and an additional cup of water in a 9x13 glass pan. Also minus pimento and used EVOO instead of lard to brown pork. VERY delicious!
