PORK CHOP ONION - RICE BAKE | |
6 pork chops 2 tbsp. lard 1 c. rice, uncooked Hot water 1 envelope onion soup mix 1 (4 oz.) can sliced mushrooms 2 tbsp. pimento, diced Brown pork chops, spread rice in bottom of rectangular baking dish. Reserve 1 tablespoon of seasoning and bits of onion to put over rice. Drain mushrooms, reserving liquid and distribute mushrooms and pimento over rice. Add hot water to reserved mushrooms liquid to equal 3 cups liquid and pour over rice mixture. Arrange pork chops over rice. Sprinkle with the remaining seasoning. Cover tightly with foil and bake in moderate oven (350 degrees) until tender, (45 minutes to 1 hour). Remove foil and cook until dry. Makes 6 servings. |
