CHOCOLATE CHIP OATMEAL CAKE 
1 3/4 c. boiling water
1 c. minute oatmeal (uncooked)
1 c. brown sugar
1 c. white sugar
1 tsp. vanilla
1/2 c. butter
2 eggs, beaten
1 3/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 tbsp. cocoa
2 c. semi-sweet chocolate chips

In large bowl, pour water over oatmeal, cover and let stand for 10 minute. Add sugars, vanilla and butter. Stir until butter melts and add eggs. Beat well. Sift together flour, baking soda, salt and cocoa, then add to oatmeal mixture. Mix well and add 1 cup chocolate chips. Stir. Pour into greased, 9 x 13-inch pan. Sprinkle with remaining 1 cup chocolate chips. Bake at 350 degrees for 35 to 45 minutes. No need to frost.
