LIBRARY ASSISTANT'S FAVORITE
LEMON CAKE
 
1 (3 oz.) pkg. lemon Jello
1/2 tsp. lemon extract
3/4 c. water
3 eggs
3/4 c. oil
1 pkg. Duncan Hines yellow cake mix

Dissolve Jello with lemon extract in the 3/4 cup water; set aside. Beat eggs; add oil and beat again. Add cake mix and Jello mixture. Beat until smooth, 2 minutes. Pour into greased and floured pan, either 9"x13" or 10" tube pan and bake 40 minutes at 350 degrees.

While warm make a mixture of 1/2 cups powdered sugar and rind and juice of 1 lemon. Poke holes with toothpick. Pour over warm cake.
