LADY DI'S FAVORITE CAKE 
6 lg. eggs
1 1/2 c. sugar
1/3 c. water
1 tsp. vanilla
1 1/3 c. flour, mixed with
1/2 tsp. baking powder

FILLING:

3 c. whipping cream
1 tbsp. vanilla
1/2 c. sugar
3 pt. baskets strawberries, rinsed, hulled and sliced (reserve some for garnishing)

Preheat oven 350 degrees. Grease 2 (8 inch) round pans, line with wax paper; grease wax paper, add some sugar and coat, then throw out excess.

Beat eggs on high until pale, about 1 minute. Gradually add sugar, beating about 2 minutes, until thick. Working quickly, stir in water and vanilla. Fold in flour mixture, just until completely blended. Pour into pans. Bake 30-35 minutes.

Filling: Beat whipping cream and vanilla until soft peaks, gradually add sugar.

Slice cake layers to where you'll have 4 layers. Put filling between each with strawberries. Garnish top.

I have been making this cake for over 60 years for our children's birthdays. It is not only delicious but also beautiful! If the party happened to be in a venue, people would drift over to check it out. We willingly shared the cake and most said it was the best cake that had ever eaten. If you have a big Kitchen Aid mixer be sure to use the whisk, not the paddle.
