PAPA'S FAVORITE FRUIT CAKE | |
1 lb. crystalized cherries, (red) 1 lb. crystalized pineapple (white) 1/2 lb. crystalized pineapple (green) 3 pts. shelled nuts (pecans) 1/2 lb. butter 1/4 lb. raisins 4 lg. eggs 1 c. sugar 1 c. self-rising flour 2 tsp. vanilla 2 tsp. almond extract 2 tsp. cake spice (apple pie spice) Cream butter and sugar, add eggs one at a time and beat well. Add flour, extract and spices, beat well, add fruit and nuts which are coarsely chopped. Pour into a large greased pan and put in 375 degree oven. After it has cooked 15 minutes, stir. Do this three times, after third time have tube pan ( Wynona uses 2 loaf pans, a little smaller than bread pans) greased and paper lined and pack cake into it. Bake 15 minutes more, let stand in pan at least 15 minutes before turning. Wrap with cheese cloth soaked in brandy. |
