CANDY EASTER EGGS 
1/4 lb. butter, softened
2 lb. 10X sugar
1/2 c. mashed potatoes
1 tsp. vanilla

Blend butter and potatoes, add sugar and vanilla; knead mixture until creamy, mold into eggs. For coconut eggs, add 1 1/2 cups fresh coconut to the above mixture.

For fruit and nut eggs, add cherries, nuts and diced fruit. Black walnuts may be added to mixture also. Refrigerate overnight.

Dip in melted bitter chocolate after chilling overnight. If mixture is too stiff, add a little evaporated milk. If too soft, add a little more sugar.
