JAPANESE FRUIT CAKE 
4 c. all-purpose flour
1/2 tsp. salt
1 tsp. nutmeg
1 c. butter or shortening
3 or 4 eggs
1 tsp. vanilla
2 c. applesauce or pear honey
2 tsp. baking soda
1/2 tsp. cloves
2 tsp. cinnamon
2 c. sugar
2 c. raisins
2 c. pecans

Sift your flour and measure with baking soda, salt and spices. Cream butter well. Gradually add sugar, beating after each addition, add the eggs, beating well. Then add raisins and nuts alternately. Add the dry ingredients, add applesauce (or pear honey), beating until smooth after each addition.

ICING:

2 coconuts, freshly ground
2 tbsp. flour
4 lemons (juice)
2 c. sugar

Add just enough water in it to let it come to a real good boil.
