PICKLED PEACHES 
5 lbs. peaches (fully ripe)
4 c. sugar
2 c. vinegar
1 c. water
1 tbsp. cloves
1 tbsp. allspice
4 to 6 (2 inch) sticks cinnamon

Peel peaches and pack in jars with 1 stick cinnamon in each jar. Pour in hot syrup. Process jars of peaches in hot water bath 10 minutes. Let ripen 6 weeks.
