CHICKEN `N RICE CASSEROLE 
3/4 c. mayonnaise
1 c. finely chopped celery
3 c. cooked, cubed chicken
2 c. semi cooked rice (cook 10 minutes)
1 can cream of chicken soup
3 tbsp. chopped onion
1 can water chestnuts, drained
1 c. crushed corn flakes (or crushed potato chips)
1/2 c. sliced almonds

Mix first 7 ingredients together. Place in a buttered 7 x 11 inch baking dish. Top with almonds. Then the crushed cornflakes or potato chips. Can grate cheese over all if desired. Bake at 350 degrees for 30-40 minutes.
