MOM ELISA'S BEANS AND POTATOES 
3 tbsp. oil
3-4 garlic cloves
2 onions
1 can crushed tomatoes OR
1 (8 oz.) can sauce
4-5 peeled potatoes, sliced crosswise
1 lb. fresh green beans (frozen beans may be substituted)

Saute onions and garlic in oil being careful not to burn garlic. Add potatoes and brown. Add tomatoes, salt, and pepper to taste.

Boil beans separately and add at the end. Let cook about 15 minutes. With salad and French bread, this makes a hearty healthy meatless dinner.
