JAM STREUSEL COFFEE CAKE 
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. sugar
1 c. milk
3 tbsp. melted shortening
Streusel topping
1/4 c. jam

STREUSEL TOPPING:

1/4 c. sugar
1/4 c. all-purpose flour
2 tbsp. butter

Combine flour, baking powder, salt and sugar. Combine egg, milk and shortening. Add to flour mixture and stir until smooth. Pour into greased 8 inch square pan. Sprinkle streusel topping over batter to form squares. Fill squares with jam. Bake at 375 degrees for 25 minutes or until done. Yield about 12 servings.
