ITALIAN SAUSAGE MUFFINS 
1/2 lb. sweet Italian sausage
2 c. flour
1/3 c. grated Romano cheese
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. basil
1 tsp. ground fennel
1 lg. egg
1 c. milk
3 tbsp. sausage grease

Preheat oven to 400 degrees. Brown sausage (remove from casing). Drain on paper towels. Reserve 3 tablespoons grease. Mix dry ingredients. Beat egg and milk. Add 3 tablespoons sausage grease. Add to dry ingredients. Mix in sausage. Grease muffin tins, fill 2/3 full. Bake 20-25 minutes.
