SAUSAGE HUSH PUPPY MUFFINS | |
1 lb. bulk sausage 4 eggs, beaten 3 c. buttermilk 2 2/3 c. yellow corn meal 1 1/3 c. flour 2 tsp. baking powder 2 tsp. baking soda 1/2 tsp. salt Lightly brown sausage. Cool slightly. Add sausage and drippings to a mixture of eggs and buttermilk. Pour sausage and egg mixture into well mixed dry ingredients. Stir until moistened. Fill well-greased muffin cups. Bake at 350 degrees for 30 minutes or until done. Makes 2 to 2 1/2 dozen. |
