BREAKFAST BURRITOS | |
1 1/2 lb. hot sausage 1 medium onion, chopped 1 medium green pepper, chopped 36 flour tortillas 1 dozen eggs, beaten 1 lg. shredded Cheddar cheese 1 1/2 lbs. frozen hash browns Brown and drain sausage; scramble eggs, adding salt and pepper. Cook potatoes until soft. Saute onion and green pepper. Warm tortillas. Combine sausage, eggs, potatoes, onions, and pepper in large bowl. Put a scoop of mixture on each tortilla; add cheese; roll up, heat, and serve. (I sometimes use the O'Brien potatoes instead of regular hashed browns, onions, and pepper. It saves time.) |
