MAGGIE'S SHORTBREAD 
1/2 lb. unsalted butter
1/2 c. sugar - super fine
2 2/3 c. reg. flour
1/3 c. rice flour (health food store)

Cream butter and sugar with fingers until mixed. Add with fingers both kinds of flour and mix well. Pat dough into 1 inch high regular pie tin. Prick little marks all over with fork. Bake 1 hour at 310 degrees (edges will be very light brown). Sprinkle with sugar. Cut into wedges. Don't substitute regular butter and never use butter.
