LO CHOLESTEROL BRAN MUFFINS 
2 1/4 c. flour
1 1/4 c. sugar (or 3/4 c. sugar and 3/4 c. applesauce)
1 1/2 c. natural bran flakes cereal
1 c. all-bran cereal
1 1/2 tbsp. baking soda
2 c. buttermilk
3/4 c. canola oil or 3/4 c. plain yogurt
4 egg whites
1/4 c. molasses or honey
1 c. raisins

Sift dry ingredients together in a large bowl. Make a well. Add wet ingredients. Mix well. Line muffin tin with cupcake papers. Spray lightly with Pam. Make as many muffins as needed. Batter can be refrigerated for up to 4 weeks. Bake at 375 degrees for 20 minutes.

This can be changed to a low fat recipe also by changing the oil to yogurt. For a low sugar recipe, add dry fruit, sugar-free applesauce or mashed banana to equal 1 1/4 cups of sugar, then substitute.
