ORANGANA BRAN MUFFINS 
1 c. orange juice
1 c. oat bran
4 tsp. grated orange rind
2 tsp. cinnamon
2 eggs or egg substitute
3 ripe bananas, mashed
1 c. raisins
1/2 c. orange blossom honey
1 c. nonfat plain yogurt
2 c. flour
1/2 c. corn meal
2 1/2 tsp. baking soda

Preheat oven to 375 degrees. Heat orange juice until simmering. In a large bowl mix orange juice, bran, orange rind and cinnamon; let stand. Put egg in medium bowl. Add banana, raisins, honey and yogurt; beat well. Add to bran mixture.

Sift together the flour, cornmeal and soda; fold into bran mixture. Pour into muffin papers; fill to the top. Bake for 20 minutes. Lo-sodium and lo-fat.
