CHILE RELLENOS CASSEROLE 
1 lb. ground beef
1/2 c. onion
1/2 tsp. salt
1/4 tsp. pepper
2 fl. oz. green chile peppers
1 1/2 c. shredded cheddar

BATTER:

1/2 c. milk
1/4 c. flour
1/2 tsp. salt
Dash of pepper
4 beaten eggs

Cut peppers in half lengthwise and seed. Brown meat and onion in skillet. Place half the peppers in 10 x 6 x 1 1/2 inch pan on bottom. Sprinkle cheese over peppers and top with meat. Arrange remaining peppers over meat. Combine batter ingredients and beat until smooth. Pour over mixture. Bake at 350 degrees for 45-50 minutes or until done.
