PIQUANT MAYONNAISE 
2 egg yolks
1 tsp. salt
1/4 tsp. red pepper
1/2 tsp. black pepper
1/2 tsp. mustard
1/2 tsp. Worcestershire
1/4 tsp. hot sauce
1 tbsp. lemon juice
1 tbsp. vinegar
1 pt. salad oil
2 tbsp. boiling water

Put yolks into small bowl; add all ingredients except oil and water. Beat on medium speed until thoroughly mixed. Increase speed to medium high slowly add oil, small amount at a time until mayonnaise begins to thicken. Oil can then be added faster. When all oil is used, add boiling water and mix well. (Water does away with the oily appearance.) Grated onion may be added if desired. Do not use plastic bowl for mixing.
