BREAD & BUTTER PICKLES | |
1 gal. cucumbers 8 onions, peeled & sliced 2 green peppers, chopped 2 red peppers 1/2 c. salt 5 c. sugar 2 tbsp. mustard seed 1 1/2 tsp. turmeric 1/2 tsp. ground cloves 5 c. vinegar Place cucumber, onions and pepper in a large crock and sprinkle with salt. Pack in ice. Put a plate on top and weight it down. Let stand 3 hours. Drain well. Combine sugar, mustard seed, celery seed, turmeric, ground cloves and vinegar. Put cucumbers (drained) in a large pan, pour over the mixture and simmer for 3 minutes. Seal immediately in hot jars. Makes 8 pints. Let stand for 1 week before serving. |
