CHILI CON CARNE AU GOURMET | |
2 lbs. cubed chuck 1 lb. boneless cubed pork 2 cloves garlic 1 lg. onion, chopped 1 tbsp. flour 1 tbsp. chili powder 1 lg. qt. can plum tomatoes, sieve, no seeds or pulp 1 tsp. salt 1 tsp. cumin seed 1 tsp. oregano 3 bay leaves 1 can red kidney beans 1 can pitted ripe olives, sliced Saute chuck and pork until brown. Add garlic and chopped onion to meat. Cover and cook for 20 minutes. Blend flour and chili powder into meat. Add remaining ingredients, except ripe olives and cook covered for 2 hours. Last 20 minutes add the sliced ripe olives. |
