PIZZA FRUIT PLATTER 
1 (1 layer) pkg. yellow cake mix (9 oz. size - Jiffy)
2 tbsp. water
2 tbsp. brown sugar, packed
1 egg
2 tbsp. butter
1/2 c. finely chopped nuts (optional)

Combine cake mix, water, sugar, egg, and butter in a large bowl. Mix well. Fold in nuts. Pour batter into heavily greased and floured 11 inch pizza pan. Bake in a 375 degree oven for 12 to 15 minutes. Let cool.

FILLING:

1 (12 oz.) pkg. cream cheese, softened
1/2 c. granulated sugar
1 tsp. vanilla

Mix together cream cheese, sugar, and vanilla until smooth and fluffy. Spread filling over cooled crust or spread Cool Whip on baked crust.

FRUIT:

1 pt. fresh strawberries, halved
1 (20 oz.) can pineapple chunks
2 doz. seedless grapes, halved
2 bananas, sliced
Mandarin oranges or peach slices also may be used

Arrange fruit in circular pattern over cream cheese filling. Make your arrangement as attractive as possible.

GLAZE:

1/2 c. apricot preserves
2 tbsp. water

Heat preserves and water together in a small saucepan until preserves are melted. Remove from the heat and brush glaze over fruit pizza. Keep refrigerated until needed. Yields: 12 pie shaped servings.
