MANDARIN SALAD 
1/2 c. sliced almonds
3 tbsp. sugar
1/2 tsp. salt
Dash of pepper
1/4 c. vegetable oil
1 tbsp. chopped parsley
2 tbsp. sugar
2 tbsp. red wine vinegar
1/2 head leaf lettuce or spinach
1/2 head Romaine lettuce
1 c. chopped celery
2 green onions, chopped
1 (11 oz.) can mandarin oranges

Cook almonds and sugar over medium heat, stirring constantly until sugar is dissolved. Cool on cookie sheet and put in airtight container. Mix salt, pepper, oil, parsley, sugar, and vinegar together and chill. Just before serving, add to lettuces, celery, onions, the other ingredients. Last add oranges and toss.
