MANDARIN SALAD 
1/2 tsp. salt
Dash of pepper
2 tbsp. sugar
2 tbsp. vinegar
1/4 c. salad oil
Dash of red pepper sauce
1 tbsp. snipped parsley

1 tbsp. + 1 tsp. sugar 1/4 head lettuce Spinach 1 c. mushrooms 1 (11 oz.) can mandarin oranges

Shake dressing ingredients in tightly covered jar. Refrigerate. Cook almonds and 1 tablespoons + 1 teaspoon sugar over low heat, stirring constantly until sugar is melted and almonds are coated. Cool and break apart. Store at room temperature.

Tear lettuce and spinach into bite-sized pieces (about 4 cups worth). Place greens in a plastic bag. Add mushrooms. Fasten bag and refrigerate. Five minutes before serving, pour dressing into bag. Add oranges. Shake bag. Add almonds. Shake again.
