MANDARIN SALAD 
1/2 c. sliced almonds
3 tbsp. sugar
1/2 head iceburg lettuce
1/2 head romaine lettuce or 1 bag of spinach
1 c. chopped celery
1 (11 oz.) can mandarin oranges, drained
Sm. bunch of green onions, chopped

DRESSING:

1/2 tsp. salt
Dash of pepper
1/4 c. oil
2 tbsp. sugar
2 tbsp. vinegar
Dash Tabasco sauce

In small pan over medium heat, cook almonds and sugar, stirring constantly, until almonds are coated and sugar is dissolved. You want them to get brown, but watch carefully as they will burn easily. Cool in a plastic container, and then chop it apart (it's like a brittle). Mix all dressing ingredients. Chill. Combine lettuces (or spinach) and celery and onions. Just before serving, add almonds and oranges. Toss with dressing.
