MANDARIN SPINACH SALAD 
1 (1 lb.) bag fresh spinach
1 (11 oz.) can mandarin orange sections, drained
1 bunch spring onions, sliced (bottoms only)
4-5 slices bacon, fried & crumbled
1/2 lb. fresh mushrooms, washed & sliced
Salt & freshly ground black pepper to taste

Prepare spinach for salad. Chill. To serve add orange sections, onions, bacon, mushrooms and seasonings. Toss with French dressing. Serves 4-6.
