MINCEMEAT COOKIES 
1 c. butter, at room temperature
1 1/2 c. brown sugar
1 tbsp. vanilla extract
2 eggs
1 tsp. baking soda
1 tsp. salt
1 tsp. ground nutmeg
1 tbsp. ground cinnamon
1/2 tsp. ground cloves
1 (29 oz.) jar mincemeat
6 c. all-purpose flour

I like Crosse & Blackwell Brand with rum and brandy added!

Preheat oven to 375 degrees. Cream together the butter, sugar, vanilla and eggs. Add the baking soda, salt and spices and blend well. Add half of the flour and mix well, then add all of the mincemeat, then gently fold in the remaining flour.

Drop in rounded tablespoons on ungreased pans or parchment-lined pans. Bake for approximately 12 minutes or until golden. Remove from oven and cool at least 2 minutes on pan before removing to a cooling rack. Best when stored in an airtight container. Yields: 4 dozen.
