PORK CURRY HOT POT 
2 lbs. lean boneless pork, cut into 1" cubes
2 tbsp. shortening
1 1/2 c. sliced onion
2 c. peeled, chopped apples
3 tbsp. flour
1 tsp. salt
1 or 2 tsp. curry powder
1/4 tsp. pepper
1/4 tsp. nutmeg
1 (10 1/2 oz.) can beef broth
1 (1 lb.) can tomatoes
1/3 c. raisins
2 tbsp. brown sugar

Brown pork cubes in hot shortening in large skillet. Add onion and apple; cook until onions are tender. Blend in flour, curry powder, salt, pepper and nutmeg. Add beef broth, tomatoes, raisins and brown sugar. Cover and simmer until meat is tender, about 1 1/2 hours. Serve over fluffy rice. Serves 6.

Condiments to pass: Coconut, chutney, chopped peanuts, lemon wedges, chopped green pepper or candied ginger.
