PECAN SWEET POTATOES 
1/2 c. unsifted all-purpose flour
1/2 c. firmly packed light brown sugar
1/2 tsp. allspice
1/2 tsp. cinnamon
1/4 c. butter
2 1/2-3 lb. sweet potatoes, pared
1/2 c. pecan halves
1/2-3/4 c. maple syrup

Preheat oven to 350 degrees. In medium bowl, combine flour, sugar, allspice and cinnamon. With pastry blender, cut in butter until mixture resembles coarse crumbs. Set aside.

Grease 2 quart shallow baking dish. Cut sweet potatoes in 1/4 inch thick diagonal slices. Place 1/3 of potatoes slices in baking dish. Sprinkle with 1/2 cup crumb mixture. Continue layering potatoes slices and crumb mixture. Top with pecan halves and drizzle with maple syrup. Cover with foil and bake for 25 minutes. Remove foil, cook until tender, approximately 10 more minutes.

Makes 6 servings.
