RAISED POTATO DOUGHNUTS | |
1/3 c. melted butter 1 tsp. salt 1 c. sugar 2 c. scalded milk 4 eggs 2 c. mashed potatoes 2 tsp. nutmeg 3 pkts. yeast, dissolved in 1/2 c. lukewarm water About 12 c. flour Mix together butter, salt, sugar, potatoes, eggs, cooled milk, nutmeg and enough flour to make a cake like batter. Add yeast dissolved in water. Add enough flour to make a soft dough. Knead, then let rise until double. Punch down, knead and roll out to 3/4 inch thick. Cut into doughnuts. Place on greased sheets or waxed paper and let rise until double. Fry in hot fat until light brown. Drain and frost with a light glaze made from confectioners' sugar, butter, vanilla, water and nutmeg if desired. Makes several dozen. |
