HUNGARIAN CUCUMBER SALAD 
6 lg. cucumbers
3 tbsp. wine vinegar
4 tbsp. scallions, minced
Salt and coarsely ground black pepper
Bibb or Boston lettuce
2 tsp. salt
4 tbsp. olive oil
3 tbsp. dill, minced (optional)
Paprika

Peel the cucumbers and slice very thin. Place in a bowl, add salt and mix. Let stand in the refrigerator for 15 minutes. Drain and squeeze out the liquid.

Combine vinegar, oil, scallions, dill, salt and pepper and add to cucumbers. Toss together and taste. Add more salt and vinegar, if necessary. Separate the lettuce leaves and line the serving dish with lettuce. Place the cucumber mixture on top and sprinkle with paprika. Serve immediately.
