SICILIAN MEAT ROLL 
2 beaten eggs
1/2 c. tomato juice
3/4 c. soft bread crumbs
2 tbsp. parsley
1/2 tsp. oregano
1/4 tsp. salt, pepper
1 clove garlic, minced
2 lbs. ground beef
4-6 oz. thinly sliced ham
1 (6 oz.) pkg. sliced Mozzarella cheese

1. Combine egg and tomato juice.

2. Stir in bread crumbs, seasonings and garlic.

3. Mix in ground beef.

4. On waxed paper, pat meat mixture to a 10 x 8 inch rectangle.

5. Arrange ham slices on met, leaving a small margin around the edges.

6. Add slices of Mozzarella atop ham. Reserve 2 slices.

7. Carefully roll up the meat, starting at short end, using the wax paper to lift it. Seal the ends and edges together.

8. Place roll seam-side down in baking pan.

9. Bake at 350 degrees about 1 1/4 hours. (Center of roll will stay pink because of the ham).

10. Cut reserved cheese slices into triangles and place on top of roll. Return to oven until cheese melts. Serves 8.
