JAM CAKE 
3 c. flour
1 1/2 c. sugar
1 c. butter
4 eggs at room temp.
1 c. buttermilk
1/2 c. orange juice
1 c. raisins soaked in a little warm water
1 1/2 c. blackberry jam
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. allspice
3 tbsp. cocoa
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. ginger

Sift dry ingredients together. Cream sugar and butter together until light and fluffy. Add eggs one at a time. Add dry ingredients with buttermilk and orange juice. Bake 350 degrees 35 to 40 minutes. Makes four 8 inch layers or three 9 inch layers.

FILLING:

Cream cheese or caramel with pecan halves on top.
