GINGER MUFFINS 
1 c. butter
1 c. sugar
4 eggs
1 c. molasses
1 c. buttermilk
4 c. flour
2 tsp. baking soda
1/2 tsp. cinnamon
2 tsp. ginger
1/2 tsp. salt
1/2 c. raisins
1 c. walnut meats

Cream butter; add sugar, eggs (one at a time), molasses, and buttermilk; mix well. Add sifted dry ingredients, raisins, nuts. Bake in greased muffin pans at 350 degrees for 20-25 minutes. (This batter may be kept in refrigerator and used as needed.)
