CANDIED WALNUTS 
2 1/2 c. walnuts or pecans
1 c. sugar
1/2 c. water
1 tsp. cinnamon
1 tsp. salt
1 1/2 tsp. vanilla

Toast nuts at 350 degrees for 15 minutes, stirring often. Combine sugar, water, cinnamon, salt in saucepan and cook to the temperature of 236 degrees. Remove from heat and add vanilla. Pour nuts into pan, coating well, pour out onto waxed paper or cookie sheet spread to cool and pack. Makes a lovely gift in glass jar.
