OKRA PILAF 
4 slices bacon, chopped
1/2 med. green pepper, chopped
1 med. onion, chopped
1 (1 lb.) can stewed tomatoes
2 c. sliced okra
1/3 c. uncooked rice
Salt & pepper to taste

Fry bacon until crisp, remove from pan and set aside. Add onion and green pepper to drippings and cook over medium heat, stirring often until tender, about 5 minutes. Add rice, okra and tomatoes. Cook continuing to stir often until liquid is absorbed and rice is tender, about 25 minutes. Stir in reserved bacon and season with salt and pepper. Serves 4 to 6.
