PAT'S POTATO BREAD | |
1 med. potato, peeled and cubed 2 tbsp. sugar 6 1/2 - 6 3/4 c. flour 2 pkgs. dry yeast 2 tbsp. shortening 1 tbsp. salt Cook potato in 1 1/2 cups water until tender. Cool to lukewarm, set aside 1/2 cup liquid. Mash potato in remaining liquid adding water if needed to make 2 cups potato mixture. Soften yeast in saved 1/2 cup liquid. Mix potato mixture, liquid mixture, sugar, shortening, salt (1-3 tablespoons); mix well. Stir in 2 cups of flour; beat well. Let rise until double (45 minutes). Stir down, add enough flour to make moderately stiff dough. Turn out on floured surface. Divide in half. Cover, let rest 10 minutes. Shape loaf, cover, let rise until almost double (45 minutes). Brush tops with milk and flour. Bake at 375 degrees for 40 to 45 minutes. Makes 2 loaves. |
