BAKED FILLET OF SOLE 
1 lb. sole fresh or frozen
1/4 c. fresh lemon juice
1/4 c. water
1 sm. bay leaf
1/2 tsp. salt
1/8 tsp. pepper
1 (2 oz.) can mushrooms
2 tbsp. butter
1 tbsp. grated onion
2 egg yolks
1 tbsp. flour
1 pkg. frozen spinach
Butter

Preheat oven to 350 degrees. Combine lemon juice, water, bay leaf, salt and pepper, and marinate fish in mixture for 1 hour. Then drain liquid into a bowl, add mushroom liquid and enough water to make 1 1/2 cups. Melt butter, add grated onion and flour and stir in liquid slowly. Cook until smooth and thick. Add spinach for 2 minutes, drain and season, arrange in a greased baking dish. Top with fish and sauce. Dot with butter. Bake at 350 degrees for 30 minutes. Serves 4.
