PINK RICE MOLD 
1 sm. pkg. cherry gelatin sugar free
1 c. hot water
1 (9 oz.) can crushed pineapple on juice
1/2 tsp. salt
1 c. heavy cream
6 sugar substitutes
1 1/2 c. cooked rice, chilled

NOTE: 1/2 cup uncooked rice will equal 1 1/2 cups cooked rice.

Dissolve the gelatin g in hot water in a saucepan. Drain pineapple and reserve the liquid. Add reserved liquid and salt to the gelatin and mix well. Chill until partially set. Whip the cream until stiff and stir in sugar substitutes. Whip the gelatin until frothy and fold in the pineapple and rice. Fold in whipped cream and pour into a 1 1/2 quart mold. Chill until firm.
