PIZZA RICE PIE 
2 2/3 c. brown cooked rice
1/2 c. minced onion (1 tbsp. dry)
2 eggs, slightly beaten
3 tbsp. butter (or substitute)
8 oz. can tomato sauce
1/4 tsp. oregano
1/4 tsp. basil
1 c. shredded Mozzarella cheese
4 1/2 oz. pepperoni/other toppings of your choice
1/4 c. stuffed olives (optional)

Mix together rice, onion, eggs and melted butter. Line 12 inch pizza pan with rice mixture. Bake 12 minutes until set.

Spread tomato sauce over rice crust. Sprinkle with oregano, basil and shredded cheese. Top with pepperoni and olives. Bake at 350 degrees for 20 minutes. After removing from oven allow to stand a few minutes before serving.
