RICE PIE 
3 1/2 lb. ricotta
1/2 c. cooked rice
2 tsp. vanilla
6 or 7 eggs
1 lb. candied fruit
1/4 lb. butter
Sugar to taste
Pinch of salt

CRUST:

1/2 c. Spry
1/2 c. milk
4 eggs
1/2 tsp. baking powder
About 2 c. flour
1/2 c. sugar

Mix like for pie dough. Roll two pie crusts. Place bottoms in pie pans. Fill with ricotta mixture. Bake at 350 degrees for 30 minutes or until brown. Makes 2 (9 inch) pies.
