BOB'S SCROD | |
Proportions vary with number being served. Scrod, sole or any white fish Spinach (fresh, canned, or frozen) Mushrooms, fresh Feta cheese (as low salt as possible) Red onion butter Steam spinach if fresh (heat if canned, thaw if frozen). Spread on bottom of baking dish. Slice raw mushrooms and layer over spinach. Lay fish fillet flat over spinach and mushrooms. Slice red onion thinly and spread separated slices over fish. Sprinkle crumbled feta cheese generously over fish. Place dabs of butter at two inch intervals over fish for moisture. Place in preheated oven at 350 degrees and bake until fish flakes and feta cheese is slightly browned. |
