CHEWY OATMEAL COOKIES 
1 c. all-purpose flour
1/2 c. sugar
1/2 c. brown sugar, packed
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. shortening
1 egg
1/4 tsp. vanilla
3/4 c. quick-cooking oats
1/4 c. walnuts, chopped (opt.)

In mixing bowl, stir together first 6 ingredients. Add shortening, egg and vanilla; beat well. Stir in oats and nuts. Form into small balls. Place on ungreased cookie sheet. Bake at 375 degrees for 10 to 12 minutes. Suitable for freezing. 3 1/2 dozen.
