CHICKEN KIEV WITH ITALIAN BREAD
CRUMBS
 
4 each chicken breasts, halved
1/2 c. Italian bread crumbs
1/2 tsp. garlic salt
1/4 tsp. parsley flakes
1 slice Swiss cheese
1/2 stick butter
1/2 c. Parmesan cheese
1/2 tsp. onion salt
1/4 tsp. oregano flakes

Melt butter in small dish - add parsley and oregano. In another small dish add bread crumbs, Parmesan cheese, garlic salt and onion salt. Mix well.

Debone and remove skin from chicken breasts. Wash and pat dry. Place chicken breast face down and spread with thin layer of butter mixture. Add strip of Swiss cheese. Roll tightly tucking cheese in and secure with toothpick.

Place rolled chicken breast in butter dish and spoon butter over the top. Roll in bread crumb mixture. Bake at 425 degrees for 30 minutes. Serves 2.
